Black Bean, Beef, and Corn Taco Mix

  • 1 lb. ground beef
  • 1 onion; diced
  • 2 cloves garlic; minced
  • 1 tsp. cumin
  • 1/2 tsp. coriander
  • 1 1/2 tsp. chili powder
  • 1 can black beans; drained and rinsed
  • 1 cup corn kernels
  • 1 cup chicken stock or water
  • Kosher salt and black pepper; to taste
  • Vegetable Oil; as needed

In a large sauté pan, heat a few tablespoon of veggie oil. When the pan is hot, add the ground beef in 2-3 large patties, cooking them like flattened burgers until well browned on one side. The patties should not touch, and work in batches if necessary! Flip and brown the second side. When the meat is well browned, begin chopping it up with a wooden spoon into small pieces. Add the onion and sauté until soft. Add the garlic and spices, cooking until very aromatic and well toasted. Add the beans and corn and cook for a minutes. Add the stock and simmer until the mixture is thickened and reduced. Taste and adjust seasoning, as needed.
