Burgers with grilled tomato and chipotle-cilantro mayo

  • 4 beef patties
  • 4 hamburger buns
  • 2 medium tomatoes
  • ¼ cup olive oil
  • ½ cup mayo
  • Juice of one lime
  • 2 Tbsp chopped cilantro
  • 2 Tbsp canned chipotle peppers
  • Kosher salt
  • Fresh cracked black pepper
  • 8 leaves fresh butter lettuce

Slice the tomatoes into thick slices and brush them generously with olive oil. Sprinkle them with salt and pepper and place them on a hot grill for about 2 minutes on each side. You want nice grill marks, but not mushy tomatoes! Brush the beef patties with olive oil, season with salt and pepper and grill to desired doneness. For the mayo: combine the mayo, chipotles, cilantro and lime juice in a bowl and mix well. Season with salt and pepper to taste. Serve burgers on fresh hamburger buns with the mayo, tomatoes and fresh butter lettuce. We love Stewart’s challah rolls for these burgers!
