Chilled Strawberry Soup

  • 2 cups strawberries
  • ½ cup sugar
  • 2 Tbsp orange zest
  • 2 Tbsp fresh orange juice
  • 2 cups buttermilk

In a medium saucepan, combine strawberries, 1 ½ cups water, sugar, orange zest and orange juice. Bring mixture to a boil, reduce heat and simmer for 20 minutes. Cool mixture completely (about 1 hour). Pour contents into a blender and process until smooth. Stir in buttermilk. Serve before your meal, chilled with fresh mint or chives to garnish.
