Couscous with Lemon and Herbs
- 1 cup couscous
- 1 3/4 cups water
- 2 Tbsp olive oil
- 1/2 tsp salt
- Zest of one lemon
- 1/4 cup chopped parsley
- 2 Tbsp chopped mint
- Additional salt and pepper if needed
In a small sauce pot with a lid combine the water, oil and salt. Bring to a boil and add the couscous. Place the lid on. When the couscous mixture returns to a boil, turn off the heat and let the mixture stand for 10 minutes. Do not remove the lid during this time. After 10 minutes, remove the lid and fluff the mixture with a fork. Replace the lid and let it steam 5 minutes more. Transfer the couscous to a mixing bowl and add the herbs, lemon zest and additional seasoning to taste. Serve immediately.
*For an interesting twist on this dish, try using preserved lemon in place of the fresh lemon zest.
