Easy Enchilada Sauce
- 1 onion; diced
- 3 cloves garlic; minced
- 1 bell pepper; diced
- 2 tsp. cumin
- 1 tsp. coriander
- 1 large can crushed tomatoes
- Kosher salt and Fresh Cracked Black pepper
- Vegetable Oil; as needed
In a sauté pan, add a small amount of vegetable oil and heat over medium. Add the onion, garlic, and pepper- cooking until softened. Add the spices and cook until fragrant and well toasted. Add the tomatoes and bring to a simmer. Blend the sauce using an immersion blender until smooth. Adjust the consistency as needed with more tomato, or some vegetable stock. Season to taste with salt and pepper, and top enchiladas before baking!
