“Elote” Corn on the Cob with Cotija Cheese and Lime
4 ears fresh summer corn, shucked
3 Tbsp Mayonnaise
1/2 cup crumbled Cotija cheese
1/4 tsp smoked paprika (pimenton)
Grill the corn until tender. When the corn is still hot off the grill rub it all over with the mayonnaise (a pastry brush works great). Roll each corn cob in the crumbled cotija. Place corn on a serving tray and sprinkle with the smoked paprika. Serve corn with wedges of lime for squeezing over just before eating.
