Falafel

  • 1 cup dried chickpeas; soaked
  • 1 large onion; medium dice
  • 2 cloves garlic; minced
  • ¼ bunch parsley
  • ¼ bunch cilantro
  • 1 tsp. coriander
  • 1 tsp. cumin
  • ½ tsp. red chili flakes
  • 1 tsp. baking powder
  • 2 tbsp. chickpea flour
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper
  • Vegetable oil for frying

In a medium saucepan, place chickpeas and enough water to cover by a few inches. Boil until tender, drain and set aside. Combine chickpeas, onion, garlic, and spices in a food processor. Pulse until well blended, but not pureed. Transfer to a mixing bowl. Stir in baking powder and chickpea flour. Season with salt and pepper, and adjust seasoning if needed. Refrigerate dough for 30 minutes and form into small walnut sized balls. Fry until golden brown in 350 degree oil.
