Gluten-Free Lemon Squares

  • 1 ½ cups gluten-free baking mix
  • ¼ cup + 2 TB sugar
  • 1 ½ tsp xanthan gum
  • 4 oz cold butter
  • 6 eggs
  • 1 ½ cups sugar
  • ¼ cup gluten-free baking mix
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup +2 TB lemon juice
  • Zest of 2 lemons

Bright, lemony and gluten-free!

Place flour, sugar and xanthan gum in a food processor. Pulse until combined. Add butter and pulse until the mixture resembles coarse meal. Press evenly into a well sprayed 9”x13” baking pan. Bake at 325°F  until golden, about 25 minutes. Meanwhile, make the filling.

Whisk together the filling ingredients. Pour over hot crust and return to oven. Bake 20-25 minutes until set. Cool before cutting into squares.
