Gluten Free & Vegan Ginger Cookies

¾ cups earth balance dairy free butter

1 cup light brown sugar

¼ cup molasses

¼ cup apple sauce plus ½ teaspoon baking soda

1 ¼ cup sorghum flour

1 cup brown rice flour

½ cup tapioca starch

1 ½ teaspoon xanthan gum

2 teaspoons baking soda

½ teaspoon sea salt

1 teaspoon ground ginger

1 teaspoon cinnamon

¼ cup granulated sugar, to roll cookies in

Preheat oven to 350 degrees.

Cream together earth balance and brown sugar until light and fluffy.  Add in molasses and applesauce and mix until combined.  

In a separate bowl, mix all dry ingredients until well combined.  Add the dry ingredients into the wet ingredients and mix well.

Place granulated sugar to roll cookies in a separate bowl.  

Roll dough into balls, about 2 tablespoons per cookie and toss into the sugar.  Bake cookies on an ungreased cookie sheet for 12-15 minutes.
