Greek Honey Pie with Citrus Mint Salad
For the Crust
- 1 1/2 cups graham cracker crumbs
- 6 Tbsp. butter; melted
- 1/2 cup oats
- 2 Tbsp. brown sugar
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
For the Filling
- 4 eggs
- 1/4 cup white sugar
- 1 Tbsp. flour
- 1/4 tsp. cinnamon
- 1/4 cup honey
- 16 oz. whole milk ricotta cheese
Citrus Salad
- 2 large oranges
- Squeeze of lemon juice
- Mint leaves; thinly sliced
- Honey; to taste
- Salt; as needed
For the crust- Preheat oven to 350 degrees. Mix all ingredients together in a mixing bowl until a wet sandy mixture forms. Press evenly into a pie dish and set aside. For the filling- beat eggs until thick and foamy, mix in sugar and flour and continue beating to incorporate as much air as possible. Add cinnamon, honey, and ricotta, and stir until combined. Pour filling into prepared crust and bake 45-55 minutes or until dark golden brown. Serve drizzled with extra honey and cinnamon.
Peel and section oranges and place in a small mixing bowl, toss with a squeeze of lemon juice, mint leaves, and season to taste with honey and salt. Serve cold over warm Honey Pie.
