Happy Lemon Cookies

  • 3 ½ cups all-purpose flour
  • 2 cups cake flour
  • 2 TB cream of tartar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 lb butter, softened
  • 3 TB lemon zest
  • 3 cups sugar
  • 8 egg yolks
  • ½ cup lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 3 cups confectioner’s sugar
  • ¼ cup lemon juice
  • 2 TB corn syrup

These sweet and tangy cookies will make someone very happy!

Sift together the first 5 ingredients. Cream the butter, sugar and lemon zest until light and fluffy. Add the yolks and mix well. Add the lemon juice, lemon extract and vanilla. Add the dry ingredients and mix just until no dry ingredients remain. Scoop out onto a parchment lined baking sheet in 3.3 oz portions. Flatten each into a 3 inch round.  Bake in a 350°F oven until golden brown. Cool on baking sheet for 5 minutes and then remove to a cooling rack to complete cooling. Ice each cookie.

Mix ingredients together. Brush, using a pastry brush, a thick coating of icing on each cookie to within a ¼ inch of the edge. Let sit until icing is set.
