- 1 stick butter
- 1 onion; minced
- 5 cloves garlic; minced
- 2 inches ginger; minced or grated
- 3 Tbsp sweet curry powder
- 1 quart veggie stock
- 1 small can tomato paste
- 1 russet potato; large dice
- 1 large sweet potato; large dice
- 1 broccoli crown; florets
- 1/2 head cauliflower; florets
- 2 cups green beans
- 1 cup pineapple
