  • 1 stick butter
  • 1 onion; minced
  • 5 cloves garlic; minced
  • 2 inches ginger; minced or grated
  • 3 Tbsp sweet curry powder
  • 1 quart veggie stock
  • 1 small can tomato paste
  • 1 russet potato; large dice
  • 1 large sweet potato; large dice
  • 1 broccoli crown; florets
  • 1/2 head cauliflower; florets
  • 2 cups green beans
  • 1 cup pineapple
