Mango Gazpacho
- 2 cups fresh mangoes, diced
- 2 cups orange mango juice
- 2 Tbsp olive oil
- 1 seedless cucumber, diced
- 1 small red bell pepper, seeded and diced
- 1 small red onion, diced
- 2 garlic cloves, minced
- 4 Tbsp lime juice
- 1 jalapeño, seeded and minced
- Salt and pepper, to taste
- Fresh cilantro, chopped for garnish
Place the mangoes, orange mango juice and olive oil into a blender or food processor. Blend or pulse until puréed. Transfer the mango-orange purée to a medium bowl. Add the diced cucumbers, bell pepper, onion, garlic, lime juice and jalapeño to food processor and pulse until desired consistency is reached. Mix to combine and season with salt and pepper to taste. Refrigerate until ready to serve. Sprinkle the cilantro over the gazpacho just before serving.
