Maple Spaghetti Squash
- 1 Spaghetti squash, split lengthwise, seeds removed
- Olive oil
- 4 Tbsp butter
- 1/4 cup maple syrup
To prepare the squash, rub each half with olive oil and season with salt and pepper. Place the halves cut-side down onto a large rimmed baking sheet. Place in a 400°F oven. Depending on the size of the squash, it will roast for about 1 hour or more. When it is done you will be able to pierce it with a paring knife with little to no resistance. Remove the squash from the oven, flip the halves over and place 2 Tbsp of butter in each half to melt. Using a fork, scrape out the squash, it will be stringy (like spaghetti!). Place the squash in a bowl and mix with the maple syrup. Season to taste with salt and pepper.
