Massaged Baby Kale with Pea Shoots, Radishes, Feta and Mint

6 cups baby kale

3 Tbsp olive oil

Juice of ½-1 lemon

1 cup or one large handful fresh pea shoots

4 radishes, shaved thin

3 oz feta cheese, crumbled

6 leaves fresh mint, chopped

Salt and pepper

In a large bowl, drizzle the olive oil over the baby kale. Add a sprinkle of salt. Using your hands, gently massage the kale, rubbing the leaves between your fingers until the kale is slightly wilted and the oil is evenly absorbed. Juice half the lemon over the kale and toss together. Taste for balance—if it is not acidic enough add some more lemon. Add the pea shoots, radishes, feta and mint. Toss to mix evenly. Taste and season with salt and pepper as needed.
