Mediterranean Tuna Salad

  • 2 6 oz cans tuna, drained
  • 3 ½ TB olive oil
  • 1 2/3 TB lemon juice
  • ½ tsp salt
  • Black pepper, to taste
  • ¼ tsp chili flakes
  • ½ tsp dried thyme
  • 2 tsp minced garlic
  • 2 TB minced parsley
  • 3 TB minced red onion
  • 1 small tomato, diced small
  • 3 TB chopped Kalamata olives
  • 3 TB chopped green olives
  • 1 ½ TB capers, drained

Combine olive oil, lemon juice, salt, pepper, chili flakes, thyme, garlic and parsley, mix well.   Add remaining ingredients and mix well.
