Mustard Greens with Chili Flakes and Cumin
- 2 TB olive oil
- 1 cup onion, chopped
- 3 cloves garlic, chopped
- 1/2 tsp chili flakes
- 1 1/2 tsp cumin seeds
- 2 lbs (about 1 large bunch) mustard greens, chopped
- Cider vinegar, salt, and black pepper, to taste

Heat the oil in a large pot over medium heat. Add the onion and sauté about 5 minutes until softened. Add the garlic, chili flakes, and cumin seeds. Sauté for 2-3 minutes more. Raise the heat to medium high and add the mustard greens. Stir until wilted. Simmer, covered, over low heat for about 20 minutes or until greens are tender. Sprinkle with vinegar, salt, and pepper to taste. Serve hot or at room temperature.
