Oat Milk Rice Pudding
¾ cup arborio rice
3 cups oat or almond milk, plus more, if necessary
½ cup chopped, toasted walnuts
Zest of one orange
Fresh fruit of your choice
Pinch of salt
In a medium saucepan, combine the rice and oat milk. Place over medium heat and bring to a simmer. Stir the mixture occasionally, until the rice is tender, and the mixture is creamy, about 25 minutes. If you like it a little creamier, add some more milk as it cooks. Add the pinch of salt and grated orange zest at the end once the heat is off. Mix well to combine.
Divide the pudding into 4-5 bowls. Top each one with chopped nuts and fresh fruit. Enjoy warm or cold.
