Orange-Honey Madeleines
- 3/4 cup flour
- 1/2 tsp baking powder
- Pinch of kosher salt
- 2 eggs
- 1/3 cup sugar
- 2 Tbsp honey
- 1 tsp vanilla extract
- 1/2 tsp orange blossom water
- 1/2 tsp orange zest
- 5 Tbsp unsalted butter, melted, cooled, plus more for molds
Preheat oven to 400°F, and prepare madeleine pans by lightly brushing with oil or butter. Stir together flour, baking powder, and salt in a medium bowl. Separately, beat eggs and sugar in a large bowl until pale yellow and thick. Beat in honey, vanilla, blossom water, and orange zest. Gently fold in dry ingredients. Add 5 Tbsp melted butter; gently fold into batter. Place madeleine pan on a baking sheet. Drop 1 scant Tbsp batter into each mold. Bake until golden and a tester inserted into center comes out clean, about 10 minutes. Remove pan from oven, invert, and quickly knock madeleines out of pan. Serve warm!
