Paula’s Paella

  • 3 cups basmati rice
  • 5 ½ cups water
  • 2 tsp turmeric
  • 3 cups diced onion
  • 2 cups diced green peppers
  • 2 TB minced garlic
  • 2 ½ tsp dried basil
  • ¼ tsp turmeric
  • 3 tsp salt
  • 1 ½ tsp black pepper
  • 3 cups diced tomatoes
  • 1 cup artichoke hearts, canned, drained, chopped
  • 1 cup roasted red peppers, chopped
  • ¾ cup frozen peas, defrosted
  • ½ cup green olives, sliced
  • ¼ cup minced parsley

Cook rice in the boiling water with 2 tsp turmeric until all water is absorbed and rice is fluffy- about 30 minutes. Cook onions gently in 2 tablespoons olive oil until translucent. Add the peppers, garlic, basil, turmeric, salt and pepper. Stir to combine. Add tomatoes and simmer for 30 minutes. Add remaining ingredients and heat through.
