Peach Sundae with Salted Caramel Sauce
1 cup white sugar
1/2 cup or more water
1/3 cup heavy cream
1 Tbsp butter
Vanilla ice cream
2-3 fresh peaches, chopped
Whipped cream
Maldon or course sea salt
To make the caramel sauce, combine the sugar with enough water to moisten it in a small sauce pan. Using a wet pastry brush, wash down any sugar stuck to the sides of the pan. Cook the sugar over medium heat until caramelized to your liking. Remove from heat and add the cream, whisking constantly to prevent it from seizing. Add the butter and whisk to combine. Add a pinch or two of salt to the sauce. Otherwise you can salt it at the time you serve it. Set sauce aside.
Assemble your sundaes with ice cream, peaches, caramel, a sprinkle of salt, and freshly whipped cream. Enjoy on a hot summer night.
