Plant Based Sausage and Veggie Mixed Grill

1 pack plant-based sausages of your choice
2 red pepper, seeds removed and cut in quarters
1 red onion, sliced in thick rings
2 zucchinis, cut in 4 quarters
⅓ cup olive oil
2 cloves garlic, crushed or pressed
¼ cup chopped fresh parsley
Juice of ½ lemon
Salt and pepper as needed
Bread for serving (optional)

In a small bowl combine the olive oil and crushed garlic and mix. Spread the veggies and sausages on a large sheet tray and brush everything with the garlic oil. Season with salt and pepper. Heat your grill to high. Grill the vegetables and sausages in batches making sure not to crowd the grill. The peppers should be grilled about 3-4 minutes on each side, the onions about 5-10 minutes on each side – leave the rings stuck together in large circles so they stay juicy. The zucchini should grill about 3 minutes on each side to avoid becoming mushy. Sausages should get nice grill marks and cook for about 5-7 minutes total. Take all the grilled items and slice them into smaller pieces – or leave everything whole (your preference). Arrange grilled food on a platter and drizzle the remaining garlic oil over the top of everything. Squeeze the lemon over the top, sprinkle generously with fresh parsley and serve immediately with bread on the side.
