Plum Clafouti
- 2 cups thinly sliced ripe plums
- 3 eggs
- 2/3 cup sugar
- Pinch of salt
- 1/3 cup flour
- 1/4 cup unsalted butter, melted
- 1 cup whole milk
- 1 TB vanilla extract
- Confectioner’s sugar
A great recipe for plum lovers, this simple baked dessert presents the sweet fruit at its finest and goes great with a good cup of coffee or a nice cuppa tea.
Preheat oven to 325° F. Butter a 10” baking dish or pie pan. Arrange plum slices in one layer in the prepared dish. Set aside. Beat eggs until foamy. Add sugar and salt and beat until mixture is thick. Add fl our and blend until smooth. Mix in butter, milk and vanilla. Pour batter over plums. Bake for 45-50 minutes, or until the top is puffed and golden, and a knife inserted in the center comes out clean. Serve warm or at room temperature. Serve in wedges, dusted with confectioner’s sugar.
