No-Bake Energy Bites

  • 1 cup oats (Gluten-Free Certified, if needed)
  • 1/2 cup sunbutter, or nut butter of your choice
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup mini chocolate chips
  • 1/3 honey or maple syrup
  • 1/4 cup ground flaxseed
  • 2 TBS chia seeds
  • 1/4 teaspoon cinnamon
  • 1 tsp vanilla extract

Mix all ingredients in a large bowl until combined forming a uniform dough. All ingredients should be wet from the seed/nut butter and the sweetener used. If slightly dry, add seed/nutbutter 1 teaspoon at a time and stir.

Roll the dough into 1 inch balls and place on a baking sheet. Refrigerate bites for 30 minutes to set before serving. Store in an airtight container in the refrigerator for up to a week.

Storage tip: place each layer of bites between parchment paper to keep them from sticking!
