Refreshing Gazpacho

  • 1 cup stale bread; cubed and toasted
  • 4 cloves. fresh garlic; minced
  • ¼ bunch cilantro; washed, dried, and roughly chopped
  • 1 large red onion; diced
  • 1 seedless cucumber; peeled and diced
  • 1 green pepper; diced
  • 2 28oz. cans diced tomatoes
  • ¼ cup balsamic vinegar
  • ¼ cup lemon juice
  • 2 tbsp. red wine vinegar
  • ¼ cup olive oil
  • 1 tbsp. chili garlic sauce ( Sambal )
  • 1 tbsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 3 cups tomato juice

In a large bowl, combine all ingredients except for the tomato juice. Using a blender, briefly puree mixture in batches. Mixture should be coarse, not smooth, with some resemblance of the vegetables. Add tomato juice and stir to combine. Taste and adjust seasoning if needed. Serve well chilled and garnish with fresh diced vegetables and croutons. Serves 12
