Roasted Fennel with Green Apples and Cheddar

  • 1 large or 2 smallish fennel bulbs, about 1 1/2 lbs
  • 6 small shallots, peeled and thinly sliced
  • 1 large green apple, peeled, cored, thinly sliced
  • Sea salt and freshly ground pepper to taste
  • 2 1/2 TB olive oil
  • 4 oz cheddar cheese

Prepare the fennel by removing any coarse outer layers, cut in half and then crosswise in ¼” slices. Place in baking dish with the sliced apples and chopped shallots. Drizzle with olive oil and salt and pepper to taste. Mix thoroughly. Roast in a preheated 400 degree oven for about 15 minutes, stirring at least once. Sprinkle grated cheese over top and place back in oven for an additional 5 minutes until the cheese is melted and the fennel is very tender.
