Root Vegetable Mash

  • 3 medium turnips; peeled and largely diced
  • 4 large carrots; peeled and cut in thirds
  • 1 medium onion; medium dice
  • 2 tbsp. vegetable oil
  • 2 cloves fresh garlic; minced
  • 2 tbsp. butter
  • 1 tsp. salt
  • ½ tsp. freshly ground black pepper

In two separate pots, boil turnips and carrots in enough salted water to allow them to circulate freely. Cook until tender, drain, and set aside. In large pot, sauté onions in vegetable oil until soft and translucent, add garlic and cook until fragrant. Add carrots and turnips. Mash until no lumps remain and add butter, salt, and pepper. Taste and adjust seasoning if needed.
