Sausage, Peppers and Onion Ragu
2 links sweet Italian Sausage
1 green pepper, sliced
1/2 large onion, sliced
2 cloves garlic, minced
3 Tbsp vegetable oil
Kosher salt and fresh cracked black peppers
In a heavy bottomed skillet, heat the oil over high heat. Remove the sausage from the casing and brown it on all sides. Remove the sausage from the pan with a slotted spoon and place in a bowl to the side. Pour off any excess oil. Return the pan to the stove and add the peppers and onions. Cook, stirring occasionally, until they are golden brown, soft and fragrant. Add the garlic and cook one minute more. Add the Sausage back to the pan and season the mixture to taste with salt and pepper. Cool slightly before stuffing into calzones.
