Spicy Citrus Slaw
1 head napa or savoy cabbage, chiffonade
1/4 red onion, thinly sliced
Zest and juice of 2 limes
Zest and juice of 1 orange
1 tsp sugar
1/2 cup mayonnaise
2 pinches cayenne pepper (optional)
Kosher salt and fresh cracked black pepper
Combine the cabbage and onion in a large mixing bowl. In a separate bowl, combine the mayo, citrus zest and juice, cayenne and the sugar and mix well to combine. Pour the dressing over the cabbage mixture and mix well, making sure everything is evenly coated. Season to taste with salt and pepper. Slaw can marinate up to 1 hour or you may serve it immediately.
