Sweet Chili Garlic Glazed Tofu
- 1 ¼ lbs firm tofu
- 3 cups rice wine vinegar
- ½ cup sugar
- 1 cup water
- ¼ cup minced garlic
- 1 TB crushed red chili flakes
- 2 TB rice syrup
- 2 TB lime juice
- 3 TB cornstarch + 3 TB water
- Scallions for garnish
A terrific way to prepare tofu!
Press as much water out of tofu as possible by wrapping in paper towels or a clean kitchen towel and pressing gently yet firmly all around. Cut tofu into cubes. Toss cubes with 2 TB oil, salt and pepper. Place in a single layer in a shallow baking pan and roast in a 350°F oven until golden.
Combine all ingredients except for the cornstarch, water and scallions, in a saucepan. Bring to a boil and let simmer until reduced by half. Lower heat and add the cornstarch water mixture. Stir until thickened. Toss tofu with the sauce and return to the oven for an additional 5-8 minutes until sauce coats tofu. Garnish with chopped scallions.
