Turkey Meatloaf with Mediterranean Herbs

  • 1 medium red onion; small dice
  • 1 tbsp. olive oil
  • 3 cloves fresh garlic; minced
  • 1 tbsp. oregano
  • 2 tsp. basil
  • 2 tsp. thyme
  • 2 tsp. mint
  • 1 small zucchini; small dice or shredded
  • 1 lb. ground turkey
  • 1 roasted red pepper; small dice
  • ½ tsp. salt
  • ¼ tsp. lemon pepper
  • ¼ cup pine nuts; toasted in a dry pan
  • 1 tbsp. lemon juice
  • 1 egg; beaten
  • ¼ cup breadcrumbs
  • ½ cup feta cheese; crumbled

Preheat oven to 350 degrees, and prepare a loaf pan by lightly greasing. In a medium sauté pan, cook onions in oil until soft and translucent. Add garlic and herbs and cook until fragrant. Add zucchini and cook until almost tender, set aside to cool slightly. In a large bowl, combine all remaining ingredients until evenly mixed. Form into prepared pan  and bake at 350 degrees for 45 minutes or until the internal temperature reaches 160 degrees.
