Vanilla-Berry Butter

  • ½ cup unsweetened applesauce
  • ¼ cup apple or blueberry juice
  • ½ cup tahini
  • ¼ cup honey
  • 1 vanilla bean, halved lengthwise and seeds scraped out
  • ½ cup raspberries and/or blueberries

Combine applesauce & juice in a medium mixing bowl. Stir in tahini, honey and vanilla seeds. Mix until smooth. In a small bowl muddle the berries with a fork or the back of a wooden spoon. Add crushed to the mixture. Beat mixture by hand until creamy and smooth. Refrigerate to let flavors blend. Serve chilled, or heat until just soft to use as a thick syrup. Makes 2 cups.
