Vegan Oat Banana Chocolate Chip Cookies

  • 1 cup mashed banana
  • 1 cup canola oil
  • 2 cups evaporated cane juice
  • 1 ½ tsp vanilla
  • 2 ½ cups + 1/8 cup all-purpose flour
  • 1 ½ tsp baking soda
  • ¾ tsp salt
  • ¾ tsp cinnamon
  • 6 cups oats
  • 1/3 cup ground flaxseeds
  • 1 ½ cups chopped walnuts
  • 1 ½ cups chocolate chips

Hearty and delicious!

Combine first 4 ingredients in a large mixing bowl and using either a paddle attachment or wooden spoon, thoroughly blend together. In a separate bowl, combine flour, baking soda, salt, cinnamon, oats and flax seeds. Add to the wet mixture and mix until no dry ingredients remain. Add the walnuts and chocolate chips and mix until just evenly incorporated. Scoop in 4 oz portions onto a parchment lined baking sheet, leaving space between each mound of dough.  Press down until each mound is 3 ½ inches in diameter. Bake in a 350°F oven until golden, about 15 minutes. Cool on a wire rack.
