Vegan Strawberry Frosting

  • 1/3 cup vegan butter (sticks work best)
  • 1/3 cup strawberry preserve
  • 2 cups of confectioners sugar
  • Juice of half a lemon

Makes about 2 1/2 cups

In a bowl mix the butter, lemon juice and strawberry preserve. Next, add the confectioners sugar slowly and mix until light and fluffy. Refrigerate for at least 10 minutes before using.
