Vegetarian Baked Ziti

  • 1 package vegetarian sausage
  • 1 tbsp. olive oil
  • 3 cloves fresh garlic, minced
  • 1 tbsp. each basil, thyme, oregano, salt
  • 1 tsp. freshly ground black pepper
  • 2 large onion; medium dice
  • 3 tbsp. olive oil
  • 4 cloves fresh garlic; minced
  • 1 tbsp. each basil, thyme, oregano, marjoram
  • ½ cup red wine
  • 1 quart diced tomato
  • 1 quart tomato sauce
  • 1 ½ lb. penne pasta; cooked to al dente and shocked
  • 4 cups mozzarella cheese; shredded
  • ½ cup parmesan cheese; grated

Preheat oven to 375 degrees. In a large pan, sauté sausage in oil, garlic, and spices. Cook until browned, remove from pan, and set aside. In the same pan, sweat onions in oil until tender and translucent, add garlic and spices and cook until fragrant. Add wine and reduce until almost completely evaporated. Add tomatoes and tomato sauce and simmer for 30 minutes. Combine cooked pasta, sauce, sausage, and some of the cheese. Fill baking dish with pasta, and top with remaining cheese. Bake at 375 degrees until browned and bubbly.
