Warmed Ricotta with Honey and Toasted Pine Nuts
1-pint fresh ricotta cheese
¼ cup pine nuts
1 Tbsp butter
2 Tbsp honey
Salt and pepper
Preheat your oven to 325 degrees F. In a medium pan melt the butter and add the pine nuts. Toss and toast until the nuts are golden brown. Move them to a plate to cool once they are golden. Spread the ricotta evenly in a small porcelain baking dish. Place the cheese in the oven for 10-15 minutes or just until it is warmed through. Drizzle the top with honey and sprinkle with the pine nuts. Serve with bread or apple slices for scooping.
