White Sweet Potato Salad with Wasabi Mayonnaise
- 4-5 cups white sweet potatoes, peeled and diced
- 1 cup seedless cucumber, diced
- 1/2 cup grated carrot
- 1/2 cup mayonnaise
- 1 TB Dijon mustard
- 1 TB brown rice vinegar
- 1 tsp wasabi paste or more, to taste
- Sea salt and black pepper, to taste

Place the sweet potatoes in a steamer basket over boiling water, cover, and steam until tender. Allow to cool, then toss with the cucumber and carrot in a medium serving bowl. Whisk together the remaining ingredients and pour over vegetables. Toss to coat, season with salt and ground black pepper. Chill before serving.
