Tarragon Chicken Salad with Apples and Walnuts

  • 2 roasted chicken breasts, skin removed and chopped or torn into small pieces
  • 1/4-1/2 cup mayo
  • 1/2 cup toasted walnuts, roughly chopped
  • 1 large, crisp apple, diced
  • 1/2 cup dried black currants
  • 1/2 red onion, finely minced
  • 2 Tbsp chopped parsley
  • 2 Tbsp chopped tarragon
  • Zest and juice of one lemon
  • Kosher salt and fresh cracked black pepper
  • Fresh greens

Combine all ingredients in a large bowl and mix together until thoroughly combined.  Season to taste with salt and pepper.  Serve with crunchy greens and a piece of bread.  Vegetarians can substitute cooked tofu in place of chicken!
