Cheese Bourekas with Fresh Herbs
- 6 oz feta cheese
- 2 Tbsp parmesan cheese
- 1 egg, lightly beaten
- Pinch of nutmeg
- 1 Tbsp each of chopped fresh chives, dill, mint, and parsley
- Freshly ground black pepper
- 4-6 sheets phyllo dough
- 4 Tbsp butter
Mash together the cheeses, egg, nutmeg, fresh herbs, and pepper. Add salt if needed. Set aside. Melt butter in a small saucepan. Preheat oven to 375°F. Butter a large baking sheet. Unwrap and unfold the phyllo dough. Place it on the counter and cover with a slightly damp kitchen towel. Take one phyllo sheet, place it on the counter and fold it in thirds lengthwise and crease folds. Unfold and cut with a sharp knife along creases to form three strips. Brush each with butter. Take a heaping teaspoon of filling and place it about one inch from the narrow end closest to you, off to one side. Fold one corner over the filling to form a triangle. Keep folding the triangle up the strip- like folding a flag, until the whole strip is folded into one triangle pastry. Brush the top with butter and place it on a buttered baking sheet. Repeat with the rest of the phyllo and filling. Bake for 20-25 minutes until golden brown and crispy. Serve warm. Can be reheated until crisp.
