Easy Sugar Cookies
- 12 oz butter; softened
- 1 cup sugar
- 1 egg
- 1 egg yolk
- 3 1/4 cup flour
- 1 Tbsp vanilla extract
- 1/4 tsp salt
In a mixer or large bowl add butter and sugar. Cream until light and fluffy. Add the eggs and yolks and mix until combined. Make sure to scrape the sides of the bowl and paddle and mix until uniform. In a large bowl combine the flour and salt together and then add to the butter mixture. Mix just until combined. Turn out onto a work surface and knead together. Divide into 2-6 pieces, wrap in plastic wrap and flatten. Chill dough for at least 1 hour. Preheat oven to 400°F. Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets and bake for 6-8 minutes.
