Apple Butter
- 8 Quarts freshly squeezed applesauce
- 4 cups white or brown sugar
- 2 Tbsp ground cinnamon
- 2 tsp ground cloves
- 2 tsp ground allspice
- Juice and zest of one lemon
Apple butter is a heavily spiced, concentrated applesauce. It is delicious on toast or bagels or on roasted meats! To make apple butter, combine all the ingredients in a heavy bottomed pot and bring to a medium simmer. Cook the mixture until it is reduced by half. Stir frequently to prevent it from scorching. Fill sterilized 8oz jars about 1/2 inch below the rim and process according to instructions listed below.
Makes eight 8 oz jars or 4 pints.
