Butternut Squash French Toast
1 loaf of Brioche
6 eggs, beaten
1 cup of cooked butternut squash, pureed
1/4 cup heavy cream
1/3 cup orange juice
1 tsp cinnamon
1 tsp nutmeg
2 Tbs maple syrup
2 Tbs brown sugar
Butter as needed
Cut bread into 1 inch slices and set aside. In a large bowl whisk together all remaining ingredients except for the butter.
Heat a griddle or non stick pan over medium heat.
Place sliced bread into egg mixture one or two pieces at a time and allow bread to soak up some of the mixture.
Once pan is hot, add a small amount of butter to insure that the soaked bread does not stick. Place prepared slices of bread onto the griddle or pan and allow to brown on both sides.
*Pureed pumpkin can be substituted for butternut squash!
