Chicken Fried Steak

To soak steak:

-1 lb. piece of sirloin; cut in half and pounded to 1/2 inch thick with meat tenderizer

-2 cups of buttermilk

-2 teaspoons of onion powder

-1/2 teaspoon of cayenne powder

-1 teaspoon of garlic powder

-1 teaspoon of black pepper

 

For the dredge:

-1 and 1/2 cups of flour

-2 teaspoons of onion powder

-1/2 teaspoon of cayenne

-1 teaspoon of garlic powder

-1/2 teaspoon of baking powder

-Salt and pepper; as desired

-Vegetable oil; for frying

 

For the soak:

In a medium bowl, pour buttermilk. Add onion powder, cayenne powder, garlic powder and black pepper to bowl and stir to combine. In a storage container, add buttermilk mixture and steak and allow to soak for thirty minutes to 24 hours.

 

For the dredge:

Combine all ingredients. Remove steak from storage container, saving the buttermilk mixture, and coat both sides in dredge. Return steak to buttermilk and then coat in dredge once again to apply a second layer.

 

Heat 1/2 inch of vegetable oil in a deep sided pan until it reaches 375˚. Add steak to pan and cook 2-3 minutes on each side until fried and golden. Place on paper towel to drain excess oil and serve.
