Cucumber and Fresh Herb Salad with Feta

  • 8 oz feta
  • 2 TB extra virgin olive oil
  • 1 ½ TB fresh lemon juice
  • Sea salt and freshly ground pepper
  • 1 large cucumber
  • 1 small red onion
  • 1 TB chopped fresh mint
  • 1 TB chopped fresh parsley
  • 1 TB chopped fresh dill
  • 1 lemon

Combine the crumbled feta, olive oil, lemon juice, salt and pepper in a medium sized bowl. Peel the cucumber and trim ends. Cut cucumber lengthwise into four pieces, remove seeds and cut into thin diagonal slices. Finely chop the onion. Add the cucumber slices and diced onion to the feta mixture along with the chopped herbs, toss to combine well. Cut lemon into wedges. Arrange salad on a platter and garnish with the lemon wedges and additional sprigs of herbs if desired. Serve with warm pita.
