Curry Roasted Pumpkin Seeds
- 1 cup clean, fresh pumpkin seeds
- 1 egg white beaten to foamy
- 1 Tbsp melted butter
- 1 tsp curry powder
- 1 tsp brown sugar
- Salt and pepper
Preheat your oven to 400°F. Prepare a baking sheet by lightly oiling it with vegetable oil. Combine foamy egg white, butter, brown sugar and curry powder with the pumpkin seeds. Mix well and spread them out in your baking sheet. Drain off any excess liquid before spreading them out to bake. Place them in the oven for 12-15 minutes or until they are golden brown and crunchy. Cool and enjoy!
