Fresh Corn and Corned Beef Hash
- 2 cups (about 1 Lb.) cooked corned beef, finely chopped or pulled
- 3 cups diced, boiled potatoes (about 2 medium potatoes)
- 1 small yellow onion, finely diced
- 2 ears fresh corn, kernels cut off the cob
- 2 to 3 tablespoons butter
- 2 tablespoons chopped parsley
- Kosher salt and fresh cracked black pepper
Melt butter in a large skillet over medium-low heat. Add potatoes and onion and sauté for 2-3 minutes until fragrant. Add the corned beef and the fresh corn. Spread the mixture evenly in the pan, let brown on one side (about 3-4 minutes without disturbing); turn with a spatula and brown the other side. Continue turning until most of the meat and potatoes are well-browned. Drain off any excess fat and season with salt and pepper to taste. Garnish with fresh parsley. Great with poached eggs!!
