Glazed Acorn Squash

  • 1 acorn squash
  • 1/4 cup brown sugar
  • 1 Tbs apple juice
  • Pinch of salt
  • 1/8 tsp cinnamon
  • 2 Tbs unsalted butter, melted

Cut the acorn squash in half and remove the seeds.  Then cut each half into 3 wedges each.

Put about one inch of water in the bottom of a large pot and place a steamer basket over the water; be sure that the water level is below the basket. Place squash in basket, cover and bring to a simmer. Once simmering allow squash to cook for about 7 minutes, they will not be cooked all of the way.

While squash is steaming, whisk together remaining ingredients.

Once squash is done steaming place on a sheet tray and brush with glaze. Cook in a 350 F oven until tender, about 20 minutes.
