Gluten Free Muffins

  • 4 cups Gluten Free Baking Mix
  • ¾ cup sugar
  • 1 tsp. salt
  • 1 Tbsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. xantham gum
  • 1 Tbsp. cinnamon
  • 3 cups frozen fruit
  • 3 eggs; beaten
  • 2 sticks butter; melted
  • ½ cup applesauce
  • 1 tsp. vanilla extract
  • 1 ½ cups whole milk

Preheat oven to 350 degrees. Prepare a muffin tin by lightly greasing or lining with paper liners. In a medium mixing bowl, combine together all dry ingredients. Add fruit to dry mix and set aside. In a separate bowl, mix together all wet ingredients. Mix dry ingredients into wet and stir until JUST combined. Over mixing toughens the batter. Portion batter into prepared muffin tin. Bake in preheated muffin until the center comes out clean when tested with a toothpick. Makes 7 muffins.
