Grilled Red Onions with Bleu Cheese

  • 4 medium red onions
  • 3 Tbsp olive oil
  • 4 oz bleu cheese, crumbled
  • Kosher salt and fresh cracked black pepper

Heat your grill to high.

Slice the onions into rounds (like you are cutting onion rings), making sure to keep the rounds intact.  This will help insulate the onion as it cooks so they do not dry out.  Lay the onions on a sheet tray and rub them evenly with olive oil on both sides.  Season with salt and pepper.  Place the slices gently onto the grill.  Allow them to grill for 4-5 minutes, ensuring you get nice black marks on them.  Turn them 90° on the grill bars using a spatula or tongs (careful not to break them apart!). After another 5 minutes flip them over and repeat on the second side.  The onion should be softened, but not limp at the end of the 15-20 minute cooking period.  The rings will gently lift out of each other.  Place the slices in a bowl and gently separate the rings. Toss them with the bleu cheese and serve immediately.
